“Honey is produced from flower nectar collected by honeybees in spring, summer and early autumn.  Some bees also collect ‘honey-dew’ from the sugary secretion of aphids that feed on tree sap.”  (Broadhurst p.33, 2000)

“Nectar is greatly concentrated; it is stored in wax cells, thousands of which from the honeycomb.  In a natural honeybee colony, honey serves as food for bees through the winter, when plants are dormant.  In an apiculture hive, most of the honeycomb is removed to extract the honey and beeswax; the beekeeper provides the bees with sugar or a corn syrup solution to sustain them.”  (Broadhurst p.33-34, 2000)

“A small percentage of honey consists of phytochemicals from the various nectar source plants.  This fact creates endless variations in honey content.  Unprocessed or lightly processed honey retains the flavor and aroma of its source plants.  Fine honey is like fine wine-its source plants, growing location, climate zone, changes in season and weather patterns, its processing and just plain luck influence its color, aroma and flavor.”  (Broadhurst p.34, 2000)

“Commercial beehives, for example, may be placed in orange groves to produce fragrant, orange-scented honey, or in white clover fields to produce light, mild, all-purpose clover honey.  Buckwheat flowers produce strong, dark, musky honey that’s an excellent substitute for molasses in baking or barbecue sauces (be forewarned that buckwheat honey is an ‘acquired taste,’ however, if you’re considering spreading it directly on your toast.”  (Broadhurst p.34, 2000)
